  • Coconut flour is a low-carb alternative to wheat flour that I like to use in keto baking. It is cheaper than almond flour, absorbs moisture and contains a lot of fiber.
  • Xanthan gum – used in gluten-free cooking to add texture and hold dough together and stable when baking or roasting.
  • Hot water – acts as a binding agent and helps make a smooth paste.

  • 1/2 cup 50 g coconut flour
  • 3 teaspoons xanthan gum or congee powder
  • 8 tablespoons boiling water
  • Cooking oil
  • a pinch of salt
  • 1/2 teaspoon paprika to taste

  • Add the hot water to the coconut flour mixture and knead the dough until smooth. Let it sit for 10 minutes.

  • With a sharp knife, cut the dough into the shape of chips.
  • Place a skillet over medium-high heat and add enough frying oil to cover the fries.
  • Fry the strips of dough until golden brown on both sides.
  • Oven method: To make the keto fries in the oven, place the cut fries on a baking sheet lined with greased parchment paper. Bake in a preheated oven at 200°C/400°F for about 12-15 minutes or until golden brown.
