Our version of this classic dish adds basil for a powerful flavor and a creamy texture that makes it feel like you spent hours in the kitchen making it, but luckily this recipe is very easy!
Tips on how to make a keto tomato basil soup:
- To achieve a smooth and creamy texture, strain the tomato paste before adding it to the pot. This will allow you to remove the skins from the tomatoes that are not left in the puree.
- For a thicker consistency, add 1 to 2 teaspoons of xanthan gum to the soup.
- Sprinkle with crumbled bacon, cheddar cheese or sour cream.

Tomato soup with basil Keto

A variation on the classic tomato soup with basil and a creamy flavor that will be the keto friendly soup of your dreams.
- 7-8 medium-sized tomatoes (about 4 cups)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 2 cups vegetable stock
- 3 tablespoons tomato paste (if you want a richer tomato flavor, you can add another tablespoon).
- 4 tablespoons butter
- 1 Becher schwere Schlagsahne
- 1 teaspoon xanthan gum (optional if you want a thicker soup)
- 1 to 2 tablespoons chopped fresh basil
Preheat the oven to 425 degrees. Line a large baking sheet with aluminum foil.
Cut the tomatoes into quarters and place them on a baking sheet. Sprinkle the tomatoes with salt, pepper and garlic powder and bake for 20 minutes.
Remove the tomatoes from the oven and let them cool for 10 minutes before adding them to the blender.
Once cooled, add the tomatoes and the released juice into the blender. Puree the tomatoes until smooth. This should take 30 to 40 seconds. To make the texture as creamy as possible, strain the tomato paste into a medium saucepan.
Cook the tomato paste over low heat on the stove.
Add the stock, tomato puree, butter and cream to the puree and cook for a further 20 minutes, stirring occasionally to prevent sticking.
Once the soup is boiling, taste it (be careful, it gets hot!) and determine if you need additional salt according to your preference. Add fresh basil and serve. Have fun!
