If you want the fluffiest pancakes, I recommend using a pre-made starter. The natural action of a raising agent, combined with a few eggs, is enough to make them rise when cooked. To make thin pancakes on sourdough, use cold, inactive sourdough that has been in the refrigerator. The thin pancakes can be used as a wrap for a snack or lunch. The consistency of the dough should be thicker. I keep the sourdough at about 100% hydration. How to make sourdough pancakes


  • 2 cups sourdough
  • 2 eggs
  • 1/2 teaspoon salt


  1. Mix the sourdough, eggs and salt until smooth.
  2. Melt the butter in a skillet over medium-high heat.
  3. Pour desired amount of batter into hot pan for each pancake.
  4. Flip the pancakes when all the bubbles appear.
  5. Once the bottom is toasted, remove the pancakes from the heat.
  6. Top with melted butter, cream, whipped cream, maple syrup, honey, fresh fruit, fruit syrup or a combination of toppings.

There are many ways to adapt this basic recipe to make different types of pancakes. Here are some ideas:

  • Add blueberries to each pancake while the first side is baking.
  • Add cooked pumpkin puree and cinnamon to make pumpkin spice fritters.
  • Add a little flour and buttermilk, yogurt or kefir the night before to make buttermilk fritters.

Can sourdough donuts be frozen?

Yes! If you already have ready-made sourdough donuts on hand, breakfast is very quick and easy. We like to make large portions of pancakes on the weekend, freeze the extra portions and use them at school in the morning. Let the pancakes cool down to room temperature first. When they are no longer warm, place them on a baking sheet and freeze for a few hours. After freezing, place in an airtight bag or container for long storage. To thaw pancakes, leave them on the counter at room temperature or put them in the oven at 300ºF until thawed and hot. Sure, you can make pancake mixes, but how long does it take to mix a few ingredients and make pancakes? I don’t think it would take much longer! Indeed, I prefer to have freshly ground flour on hand rather than flour that has been sitting on a shelf indefinitely, and I prefer to let grains rise or ferment before using them. For centuries, people have prepared grains in traditional ways using methods such as acidification or fermentation.
