I love being able to enjoy all my favorite baked goods in sourdough form. Fermenting sourdough flour releases the nutrients of whole grains and makes them easier to digest (source). Here’s a simple and easy sourdough tortilla recipe that we love for taco shells, burritos, quesadillas and more. You can even cut the tortillas into chips, roast them in the oven and make sourdough chips.

Tips for success

You may be wondering if I need an active starter. These sourdough tortillas are one of my favorite recipes, along with sourdough donuts. Live and active starter cultures may be used, as well as spent cultures that have been refrigerated for some time. You can use a variety of whole wheat flours for sourdough tortillas, but I prefer wheat flour. This is a stronger flour that makes tortillas stronger and easier to bend. When kneading the dough, look for a consistency that is sticky, but not so wet that it is uncomfortable to work with. Add the flour little by little, stirring to get the right amount. My favorite fat to make these tortillas is lard or bacon grease. Lard is a traditional choice for making homemade tortillas because people have been doing it for centuries. How to make sourdough cookies

Ingredients: Instructions:

  1. In a large bowl, mix the starter, water, melted fat and salt.
  2. While stirring, add the flour little by little. Stop when the dough becomes sticky, but not so wet that it is difficult to work with.
  3. Knead the dough in a bowl or on a floured surface for a few minutes.
  4. Cover the bowl with the dough and let it rise in a warm place for 7 to 24 hours.
  5. When the dough is ready to cook, divide it into 8 equal portions.
  6. Roll out each piece of dough on a floured work surface to the desired thickness.
  7. Fry the tortillas, one at a time, in a hot cast iron skillet over medium-high heat for 15-30 seconds on each side. Make sure bubbles form and the tortilla becomes firm.
  8. Serve hot or cold.

How to make tortilla chips with leftover flour tortillas

Preheat the oven to 400ºF to prepare the chips with the remaining tortillas. Grease the tortillas with melted fat, e.g. B. with lard, bacon fat or coconut oil. Use a pizza cutter to cut the tortillas into pieces. Sprinkle the chips with salt or other seasonings to taste. Herbs, peppers, garlic and grated cheese are tasty options. Bake until crisp, about 8 to 12 minutes.

How long can sourdough pastries be kept?

Custard tortillas can be stored on the counter for 3 to 5 days. The sourdough keeps them fresh at room temperature longer than unleavened baked goods. Sourdough tortillas will keep in the freezer for about 6 months.

Can I freeze the tortilla dough?

Yes! The dough can be frozen and taken out before baking to thaw. I recommend freezing the dough at room temperature after fermentation.

Can I freeze cooked tortillas?
